miso kinako banana bread
soybean, times two!
I feel like I’ve recently re-discovered banana bread (I hadn’t eaten it or baked it in months for some reason — never again.) This miso kinako banana bread isn’t my most unconventional flavor combination, but I did put miso + kinako together as a bit of an ode to soybeans. Miso has been a well-loved ingredient in both cooking & baking, & I think kinako deserves a bit of the love too! It’s another product made from soybeans, but while miso is salty & umami, kinako tastes nutty & slightly sweet (without even having added sugar). This banana bread has all those flavor profiles, but it’s a bit more subtle so that the banana still shines through.
